I make this for dinner almost every week. Spicy Italian sausage is such an easy protein to keep in the fridge – whether it’s for pasta, soup, or sandwiches, it’s always a good go-to.
This recipe comes together pretty quickly. If you boil your pasta while you chop the vegetables, you can easily have the whole meal done in under 40 minutes. I personally like skipping the tomato-based sauce in this one – the sausage and white wine give it plenty of flavor without making it too heavy. But hey, if you’re a sauce person, you can totally add some store-bought or homemade sauce and keep the rest the same.
Leftovers also last a few days and heat up great at work. Enjoy!
Fusilli with Spicy Sausage & Broccolini
Serves: 2-4 | Time: 40 Minutes
Ingredients
1lb Spicy Italian Sausage
1lb of pasta of your choice (but I love fusilli lunghi)
1 bunch of Broccolini, chopped
1 Yellow Onion, diced
4 Cloves of Garlic, minced
0.5 Cup of White Wine
2.5oz of Spinach
Parmesan Cheese
0.5 Lemon Juice Squeeze
Salt, pepper, paprika, red pepper flakes to taste
Instructions
Prepare the Pasta and Ingredients
• Boil the pasta according to package instructions.
• While the pasta cooks, dice the onions, mince the garlic, and chop the broccolini (or your vegetable of choice) into large 2-inch pieces.
Cook the Sausage
• In a large skillet over medium heat, crumble the sausage and cook until browned and firm, about 6–8 minutes.
Sauté the Vegetables
• Add the diced onions and chopped broccolini to the skillet with the sausage. Cook for 3–4 minutes, stirring occasionally, until the vegetables are slightly browned. Add paprika, salt, pepper, red pepper flakes.
• Add the minced garlic and cook for another 2 minutes.
Add Spinach and Wine
• Stir in the spinach and white wine. Cook until the spinach wilts and the wine is mostly evaporated, about 2–3 minutes.
Combine and Finish
• Once the wine has cooked off, add the cooked pasta to the skillet.
• Stir in 1 tablespoon of butter, lemon juice, grated parmesan cheese, and a dash of olive oil. Toss everything together until well combined.
Serve
• Serve immediately and enjoy!
