Fried Rice is one of my favorite easy/quick-to-cook dishes, especially to feed a large group or to eat as leftovers for a day or two. Personally, I love having bacon & eggs in my fried rice (breakfast fried rice?). The bacon grease serves as the oil you use to fry the remaining ingredients. But you can easily swap these out for any other ingredients you prefer!
The biggest lift of this recipe is the prep work, which could take up to 10-15 minutes. There’s a good amount of chopping/dicing/mincing that needs to occur before you start cooking, but once the pans are on the heat, it only takes a few minutes to get the finished product.
You can either serve Fried Rice as a side dish, along with a protein or some vegetables, or add those same proteins and veggies to the stirfry early on so they’re a part of the rice. We’ve made chicken fried rice, kimchi fried rice & more by making very minor tweaks to the below recipe.

Fast & Delicious Bacon Fried Rice
Serves: 2-4 | Time: 30 Minutes
Ingredients
2-3 Cups of Cold Rice (I usually cook the night before & store in the fridge overnight)
4 Slices of Bacon, diced
4 Eggs, whisked
1/2 Yellow Onion, chopped
4 cloves of Garlic, minced
4 Green Onions, sliced
3-4 Tbsp of Soy Sauce
1 Tbsp of Butter
1 Tsp of Sesame Oil
Pinch of Seasame Seeds
Salt to Taste
Pepper to Taste
Instructions
Prepare your Onions (chopped roughly), Garlic (minced finely) & Green Onions (sliced) on a cutting board and set aside separately. Whisk together the four eggs in a bowl and season lightly. Scramble eggs in a pan and remove from heat.
Dice your bacon into bite-sized pieces and add to a hot pan. Fry for 1-2 minutes, until the bacon barely starts to crisp, and then add Onions, Garlic & Sesame Seeds. Cook until fragrant and Onions are transparent.
Add Rice to the pan, and use a spatula to break it apart. Add half of your soy sauce and continue breaking apart the rice and mixing the ingredients in the pan. Add the Butter, the remainder of the Soy Sauce, the Seasame Oil, and the Scrambled Eggs - and continue to mix.
Once the color of the rice looks consistent throughout the pan, add salt & pepper to taste and remove from heat. Mix in Green Onions and serve!
